I use a nearly identical method except I remove the feet, tail, and head after pulling the "shirt" and "pants" off. I find this order more desirable because all your waste parts are attached (i.e. feet) or enclosed (i.e. head & tail) in the excess skin which acts as an inside-out bag, and I dump the guts in the excess skin as well so clean up is easy.

I love squirrel meat, but no one else in my family will eat the cute little tree rats ;)
