Spiced Green Tomato Cake

Following an old Southern recipe, I first saved my green tomato crop from Northern Florida's hard freeze, then I baked them:

OK, so I didn't exactly follow the directions... I had no baking powder, so I left it out, no walnuts, so I substituted coconut and baked 15 minutes longer. Yumm! This recipe is so forgiving, you can't mess it up. Don't divulge your "secret ingredient" until after they're hooked. ;)
