Roasted Turnip and Winter Squash Soup

This soup is a taste of fall. When the weather turns cold and winter squashes appear in the market, the flavors of roasted root vegetables and sage suit just right and turnips perfectly balance the sweet squash. This is not an overly-rich soup, yet it feels luxurious with that little bit of mascarpone whisked in at the end and a scattering of toasted pine nuts on top.


Hint: Like anything wickedly delicious, there is no real substitute for mascarpone. But we have come across Tiramisù recipes that give you three substitution options:

  • Use the "freshest, best-quality" cream cheese you can find
  • Mix equal amounts of cream cheese and sour cream
  • Mix 1/2 pound of ricotta cheese with 1 cup of heavy cream in a food processor until it forms a homogeneous cream (this substitutes for about 1 pound of mascarpone) -- via Ochef
